Major Acre Farm began in 2017 as a small organic farm growing fruits and veggies for the greater New Orleans area. This hot sauce arrived in the summer of 2018 after growing too many hot peppers. To preserve the bounty during the busy growing season, we processed them with salt and later added vinegar to stabilize the pH. We had stumbled into the simplicity of “Louisiana-style” hot sauce and the final product was delicious. At market, customers immediately recognized the special quality of this sauce, asking when it would be available again, and requesting bulk orders! From then on we’ve grown chile peppers specifically for our hot sauce.
In 2021, we relocated to New Mexico which is famous for its chile peppers. We’ve scaled back on veggies to focus on producing peppers and are slowly getting into retail spaces in Santa Fe and New Orleans. All of our chile peppers are processed in a commercial kitchen space that we rent in compliance with our manufacturers permit.
